15 Minute Meal that Meets Coach JC’s 10 Habits | Fit First Responders

We get so many people always asking, “What do you guys eat?”

Jodi, “What does Coach JC eat?”

You want it, so you got it!

We’re going to take you into our kitchen and on our trips to the grocery store so you can see how we WIN in our Nutrition.

If you have not heard already, it’s no secret that I’m not much of a fan of cooking.

So like Coach JC says, I like to “KEEP IT SIMPLE!”

I typically look for meals that are easy to fix, meet all of our 10 habits of Nutrition 101 and that taste good.

Since I have a teenage step-daughter and husband, sometimes it can be hard to please everybody in taste while trying to also juggle crazy schedules.

I know we aren’t the only ones with a busy schedule so that is why I wanted to hook you up with one our our quick and easy meals.

On the nights that we have Bootcamp Tulsa and other activities I ALWAYS (or at least almost always) plan for something fast and easy.

As you know the name of the game is to

PLAN and PREPARE!

So today I want to share with you one of our Go -To meals that is Coach JC approved and simple to throw together after a busy day…

and the best part…

You can have it on the table in ONLY  15 min!

The day before I made a stop at Whole Food on 91st and Yale to pick up one of their pre-made rotisserie chickens.(JC loves these of course because they are all organic and Alivia loves the crispy seasoned skin.)

I then grabbed some snap peas and some ingredients to throw together one of my favorite salads.

I popped the rotisserie in the oven(after drizzling a little Olive Oil on it…Come on, JC is Italian so that means Olive Oil and garlic on EVERYTHING!)

While the chicken heated up I prepared our side dishes.

Gotta Get Those Veggies!

I empty the bag of snap peas into a frying pan with a little salt, pepper, garlic powder, and sesame oil.

Man, if you haven’t had sesame oil you are missing out!

It is so yummy and gives it a different flare. I cooked this on medium while stirring it occasionally until desired firmness.

I have heard of sesame oil many times but never really gave it a second thought to try it until my MIL left some at my house.  So I decided to give it a try and now I can’t put it down.

Here’s a little sesame oil love for you and why we like to use it…

Sesame oil has some great health benefits such as: healthy skin, helps prevent diabetes, reduces PMS symptoms (JC sure loves this with two ladies in his house), lowers cholesterol, high in antioxidants, and helps with making your heart healthy.

Sesame seed oil works great while cooking with it at high temps and the flavor is delicious!

The next side dish I did had a hint of Mexican to it (Trying to make Coach Jaime proud here).

I call it our Summer Salad (and another great one I borrowed from my MIL)

Here’s how simple this one is…

– Chop up a cup of onion
– A seeded jalapeño
– A cup of cilantro
– 1-2 cucumbers
– Non GMO corn
-Olives
-Tomato

Chop it all up and place it into a bowl, lightly salt it, add a little pepper, a few shakes of cumin, and some olive oil, stir it up and serve chilled. Bam!
